It was very simple, fast, and can be made with infinite variations. The only downside is that it&#8217;s not very pretty which is why I didn&#8217;t even bother taking a picture. Even a professional food stylist would have a tough time with the super thin egg\/cheese\/tortilla base, but if you&#8217;re going for taste, then this is definitely a keeper. The original recipe never mentioned how to use the tomato slices and chopped onions so I assumed they were toppings and you could add whatever toppings you have on hand or sounds good.<br><\/p>\n<\/div>\n<div class=\"zrdn-block-wrap zrdn-ingredients\"  ><h3 class=\"zrdn-recipe-label zrdn-ingredients-label\">\n    Ingredients<\/h3>\n\n\n<ul class=\"zrdn-list zrdn-ingredients-list  zrdn-element_ingredients\">\n            <li>4 corn tortillas\r<\/li>\n\n            \n            <li>4 oz. monterey jack cheese, grated\r<\/li>\n\n            \n            <li>4 eggs, beaten\r<\/li>\n\n            \n            <li>1 c. milk\r<\/li>\n\n            \n            <li>1 t. chopped jalapeno\r<\/li>\n\n            \n            <li>1\/2 t. chili powder\r<\/li>\n\n            \n            <li>1\/4 t. powdered mustard\r<\/li>\n\n            \n            <li>1 t. olive oil\r<\/li>\n\n            \n            <li>1 garlic clove, minced\r<\/li>\n\n            \n            <li>1\/2 c. tomato sauce\r<\/li>\n\n            \n            <li>1\/8 t. ground cumin\r<\/li>\n\n            \n            <li>1 medium tomato, cut into slices\r<\/li>\n\n            \n            <li>1 heaping T. chopped onion<\/li>\n\n            <\/ul>\n\n<\/div>\n<div class=\"zrdn-block-wrap zrdn-instructions\"  >    <h3 class=\"zrdn-recipe-label zrdn-instructions-label\">\n        Instructions    <\/h3>\n<ul class=\"zrdn-list zrdn-instructions-list   zrdn-element_instructions\">\n\t\t            <li>Place tortillas in casserole dish. Top with 2 oz. grated cheese.  In bowl, combine eggs, milk, jalapeno, chili powder, and mustard. Pour mixture into casserole and sprinkle with cheese.\r<\/li>\n\t\t\n\t\t            <li>Bake at 350 F for 30 minutes. \r<\/li>\n\t\t\n\t\t            <li>In sauce pan, add garlic to oil and saute.
